Sunday Dinner // 29 January 2006 // Back From The Bar

I will pull an excerpt from Nigella Lawson's book which best describes this dish. She recommends eating at midnight, I recommend eating the night after a rough night, during chow fests like the Superbowl, during pity parties when you need comfort food, or especially when you feel like screaming "to hell with Atkins!"

Back From The Bar Snack - FEAST by Nigella Lawson (pg 414)
Serves 2

1/2 cup frozen peas
2 cups cooked all purpose potatoes
2 slices bacon (**I ditch the bacon and use 2-3 cloves of garlic instead)
1 teaspoon vegetable oil
2 eggs
1/2 cup cheddar cheese, chopped

Put some salted water on for the peas*, and in a frying pan that will take the potatoes and everything later, cook the bacon - scissored up into little strips - (**or garlic) - in the oil.

Cook peas and at the last minute, tip in the potatoes just so they heat up. Drain and turn the pan with the bacon and take it off the heat. Whisk the eggs with the cheese and then pour this over the potatoes and peas in the pan. Mix well and pour straight into a bowl or two smallish plates.

*NOTE - If you're cooking this from scratch, just add the peas to the potatoes when they're about 5 minutes from being done.
